Effect of African Catfish Mucilage Concentration on Stability of Nanoemulsion Using D-Optimal Mixture Design

Nanoemulsions are alternative means of incorporating functional components into systems. This research aims to model the effect African catfish mucilage (ACM) concentrations on particle size (PS) stable oil-in-water (O/W) nanoemulsions formulated by ultrasonication. A D-optimal mixture design was used study influence three (MCs) ACM, oil, and water PS. Morphology PS were determined with Cryo-TEM Zetasizer. Findings show that higher ACM–emulsifier oil ratio, nanoemulsion stability as depicted lower ACM concentration factor had most dominant dependent variable (DV) studies revealed structural a result which encapsulated mucoadhesion.
